INGREDIENTS
125 grams softened butter
125 grams caster sugar
2 eggs, lightly beaten
1 teaspoon vanilla essence
125 grams self raising flour
2 tablespoons milk

METHOD
1. Pre-heat oven, with an adult’s help, to 190 degrees celsius.
2. In a large mixing bowl, beat the butter and sugar together until fluffy and lighter in colour. An electric beater or wooden spoon should do the job!
3. Add the lightly beaten egg while whisking then add the vanilla essence.
4. Sift in half the flour and fold into the mixture. Add the milk and the rest of the flour and fold in until well combined.
5. Spoon into patty cases or muffin tins and bake for 12 minutes or until they have risen and turn golden on top.
6. Allow to cool on rack until they get to room temperature – don’t eat them yet! You can make the icing while you wait.

ICING
100 grams icing sugar
1 1/2 tablespoons milk or water
A few drops of green food colouring
Spearmint leaves
Hundreds and thousands for sprinkling on top!

Mix the milk and icing sugar together. Add the food colouring. Spread the icing over the cakes when they have cooled. Top with one or two spearmint leaves, then sprinkle on your hundreds and thousands. Yay! You’ve made your own super yummy Garden Cakes!
